Lemon Bars
1/3 cup butter
2 eggs
1/2 tsp. baking powder
2 tsp. grated lemon peel
1/4 cup lemon juice
1 egg
1 pkg. lemon cake mix
1 cup sugar
1/4 tsp. salt
powdered sugar
- Mix 1 egg, butter and cake mix until crumbly-reserve 1 cup.
- Pat remaining Kmix into ungreased oblong pan.
- Bake 15 minutes or until light brown.
- Beat 2 eggs, sugar, baking powder, salt, lemon peel and lemon juice with rotary beater until light & foamy.
- Pour over hot crust, Sprinkle with reserved crumb mix.
- Bake 15 minutes or until light brown.
- Sprinkle with powdered sugar.
- Cool and cut into bars.
