Carrot Drop Cookies
3/4 cup sugar
3/4 cup shortening
1 egg
1 cup cooked mashed carrots
2 cups flour
2 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
1/2 tsp. lemon juice
- Cream sugar & shortening; add eggs and beat well.
- Add flavorings & carrots, mix well.
- Sift flour, baking powder & salt into mixture & mix.
- Drop by teaspoonful onto cookie sheet.
- Bake at 350 degrees.
- Frost with orange flavored frosting.
